SALSA is a not-for-profit, approval scheme for local food and drink
manufacturers supplying products aimed at meeting the standards expected
by national buyers. It is based upon a standard, the fundamentals
of which are product safety, legality and quality and the provision of
demonstrable due diligence.
The scheme was set up following recognition that in many instances
smaller suppliers were finding industry acceptable quality assurance
standards overly expensive or with disproportionate requirements.
The need for this has been highlighted by an increasing drive for
locally sourced food, particularly from food service companies and
retailers.

The use of automation and robotics has become a growth
area within the food and drink industry which is faced with the
challenge to investigate all possible opportunities for robotics
technology to improve business efficiency, standards of hygiene, higher
output and hence increased profit margin - whilst also improving the
working conditions of the labour force.
Delegate feedback, from the two very successful ´Automation &
Robotics´ events held at CCFRA, indicated that the next seminar should
focus on the application of robotics in the food industry and feature
´real life´ examples of robotic systems in action. This seminar, will
therefore include:-
- The systems needed to be put in place in order to get the most out
of a robotic system, and the safety implications
- Integrating the robotic system within the manufacturing plant
- Hygienic design considerations
- Cleaning and decontamination regimes required to maintain an
hygienic operation.

Packing

A previous knowledge of basic food hygiene is desirable.

This short course provides an overview of micro-biological
hazards in produce, the principles on which a food safety management system can
be based, and the benefits that can be derived from its implementation. This
course will enable delegates to obtain apractical introduction to the principles
of HACCP and their application, with special reference to the production of
fresh produce (cropping and post-harvest handling) and associated
microbiological hazards. Consideration will be given to identifying the main
risk areas in primary production and adopting appropriate controls. This is a
practical course suitable for fruit and vegetable growers and produce marketing
organisations.
